At the beginning of the pandemic, chef José Gonzalez moved to Zona de los Santos as an escape from the city without knowing that his next project would be at Copey de Dota.

After a 2-year break in his culinary career and after research in the area, José, together with the Cedrela team, launched his second kitchen project in Costa Rica, Al Mercat Dota.

Zona de los Santos and specifically Copey de Dota are our pantry. A beautiful town at 2,200 meters above sea level that provides unique high-altitude products to our restaurant and to many communities in the region and beyond.


Our kitchen becomes a reflection of what the area has to offer. From wild products in mountains, hills and streams to emblematic crops such as coffee and avocado, which are the protagonists of the project and our cuisine.
